    How to frog your turkey

I've started frogging my turkeys instead of spatchcocking and I'm liking the method alot. Way faster cook times, more even cooking, easier than spatchcocking because you just need to cut through some weak rib cage bones rather than down the spine. The oysters stay intact as well. Main disadvantage is it takes up way more space, but I do 2x smaller 10lb turkeys instead of 1 big one so not a huge deal for me. I'd definitely be concerned doing a 20+lb turkey like this in a regular oven though. #turkey #thanksgiving

Cedar Plank Salmon the Right Way

Cedar plank salmon but we’re actually letting the cedar burn 🔥🐟 No soaking the plank. No wet-wood sauna. The whole point is to get that cedar hot enough to char and create real smoke flavor. Seasoned with Smoke Trails BBQ Rib Rub, smoked on the Oklahoma Joe’s Laredo, then finished with BBQ sauce until glossy and tacky. I usually pull salmon around 130°F for a juicy finish that still keeps the family happy. Smoked Beef Cheeks with Smoke Trails BBQ Brisket Rub

These smoked beef cheeks are ridiculously rich, tender, and packed with beefy flavor. I smoked Wagyu beef cheeks on my Oklahoma Joe’s Longhorn with cherrywood, then finished them covered in ghee until they were so tender you could push a finger right through them. And remember: just because beef cheeks hit 205°F doesn’t mean they’re done. Keep cooking until all that collagen breaks down and they’re completely probe tender. How to Restore an Offset Smoker and Prevent Rust

Got rust or chipped paint on your offset smoker? Here’s a quick way to clean it up and help protect it for years. I use vegetable cooking spray on the hot parts of the smoker, like the firebox, cook chamber, and stack. Once heated, the oil polymerizes and creates a protective, water-resistant coating similar to seasoning cast iron. For cooler areas like the legs and frame, clean off any loose rust and touch them up with high-temp black paint. Simple rule: oil for the hot parts, paint for the cool parts. A little maintenance goes a long way toward keeping your Oklahoma Joe’s offset smoker looking good and fighting rust. #OklahomaJoes #OffsetSmoker #BBQTips #SmokerMaintenance #BBQ #BackyardBBQ #SmokingMeat
