  • What do I need to know before making the jump

Hi everybody, My 22" Weber kettle and 18" Smokey Mountain are now due to be replaced, and I think I want to make the jump to a Kamado Joe so I thought asking the community for some advice. Here are our parameters: We're in Canada where we get a fair amount of snow, unit will be at the cottage, as smoking food downtown in our area is not the best due to neighbours 😄 Most of the time it's just us two, but I want the room to smoke two chickens, and do a few full-sized salmon filets Unit will be used for both grilling and smoking

The BEST Gameday BBQ Meatballs You Will Ever Eat!

These Smoked Elk Meatballs are an easy and delicious way to turn wild game into a killer BBQ appetizer or meal. We’re using elk in this recipe, but you can absolutely substitute your favorite wild game or even ground beef. The meatballs go onto a traditional offset smoker where we cook them low and slow, allowing them to pick up plenty of smoke flavor. Once they reach around 150°F internal temperature, we brush them generously with BBQ sauce and return them to the smoker just long enough for that sauce to tack up and get nice and sticky. These Smoked Elk Meatballs are smoky, juicy and packed with flavor. They’re a great way to use your wild game harvest and make an awesome appetizer for game day, deer camp or any backyard BBQ! Reverse Seared Chicken Thighs | Traeger Grills

Best new cooking method for chicken. Reverse Seared Chicken Thighs 🔥 We put our favorite steak technique to the test on chicken thighs, and the results did not disappoint. Smoky, juicy, with crispy, golden skin. Here's how we did it: Smoke Low: Set your Traeger to 225°F and cook until the thighs reach 140°F internal. We expected 60–90 minutes, but they got there quicker than anticipated. Cook to temp, not time. Crank the Heat: Pull the thighs off and increase your Traeger to 450°F. Sear: Place the thighs skin-side down for 6–7 minutes, or until they reach 170°F internal for tender, juicy dark meat and crispy skin. Who's tried this before?👇 #TraegerGrills #Traegerhood #ReverseSear #ChickenThighs #GrillingTips

  • Wildfork “Reserve”

First time buying steaks there as their shutting down in Canada. Here is what they’re like so that you know before buying. They’re thick, around 1”, but fat is massive. Picked up the ones with the largest caps (some had almost none). Over all decent quality. They’re going on the Kamado tomorrow for a steak feast. The guy there confirmed they’re dry aged not wet aged. Went home and researched and they’re indeed wet aged. But at C$30 a piece figured they’re still good - around 600g each. submitted by /u/Hafezberg [link] [comments]
